Sugar:- it gives sweetness to the ice cream. Add as per your taste.

Whole milk:- Milk fat adds smoothness and richness to ice cream and contributes to its melting properties.

Heavy cream:- It helps create the base for the ice cream. Heavy and whipped cream’s significant fat content covers ice crystals, preventing them from expanding.

Vanilla extract:- I love the vanilla flavor. That’s why I am using this vanilla extract in my recipe.

Egg yolks:- Egg yolks also increase the durability of ice cream, lowering its tendency to melt before it gets from the freezer to the cone to the mouth.

  1. Place the blackberries into the bowl of a food processor and pulse until the berries are mostly pureed. Transfer the pureed berries into a large bowl. Set aside.
  2. Place the yolks and sugar in a medium bowl. Whisk the sugar/yolk mixture together for about 1 to 2 minutes until thick and pale yellow.
  3. Whisk the cream, milk, and vanilla into the egg/sugar mixture until fully incorporated.
  4. Transfer the mixture to a medium pot and place the pot over medium-low heat.
  5. Heat the mixture slowly, constantly whisking until a candy, or instant-read thermometer reads between 175-180F. The mixture should thicken and coat the back of a spoon.(Note: Do not let the mixture boil. If the mixture curdles, remove it from the heat and cool. Please place it in a blender and whip until smooth.)
  6. Strain the custard through a fine sieve into the pureed berries bowl. Cool the mixture by placing the bowl over an ice bath. Continue to whisk the mixture.
  7. Refrigerate the mixture until thoroughly chilled when it is cooled to room temperature.
  8. Churn in your ice cream maker following the manufacturer’s directions.
  9. Transfer to a container and store in the freezer.
  10. Serve in bowls or on cones.
