Korean tea cookies, as per the name you can see it is originated from Korea. It is also known as dasik (다식 茶食). If you have a child or in your family, you can give them a very heartwarming treat with these cookies.

History of Dasik:-

According to Wikipedia, “The Dasik, along with Buddhism and tea culture, arrived in Korea 1,600 years ago from India. Korean nobility was the first to be introduced to tea, which eventually spread to the upper classes. Korean agricultural land is unsuited for tea production due to its climate, making it impossible for the wealthy class to enjoy foreign beverages. Buddhist temples were hubs of Korean tea culture because Buddhist rituals were the most popular occasions for drinking tea.”

These Korean biscuits were served with traditional tea during the Shilla and Goryeo Dynasties, generally reserved for aristocracy and royalty.

These beautiful, delicate and tasty tea cookies are made with sesame seeds, grains, and pollens. According to Joseon Dynasty records, Korean sweets such as this Dasik, Yakwa, and Gangjeong were all “piled high” (Goinda) on tables to make an imposing table when a royal feast was held. According to records, these towers were built to a height of 55 cm (21+ inches)!!

What is a dasik pan(다식판)?

Dasik pan is a particular type of pan in which they have special-designed molds used to give the shapes to the cookies. These molds come with unique designs like lotus, plum, chrysanthemum, marigold flowers, bamboo, peach, phoenix designs, and some geometric patterns.

And also, these have some Korean letters like 복 福 good fortune, which make any Korean tea cookies perfect for the lunar new year, which show good luck to the people you want to give the treat in lunars new year.

it is made with sesame seeds, grains, and pollens. It is wonderfully light sweets. These are lovable cookies because they are made in many shapes.

And these shapes come from the Dasik pans. Also, they come in many colors. If you want to make perfect dasikda, you need a Dasik pan(다식판).

How to Make Korean tea Cookies/Dasik:-

Ingredients:-

1 cup roasted sesame seeds (110 g )1/8 tsp sea salt or more to taste
1 cup sugar1 tbsp rice syrup
1 cup honey

1.Make sure your sesame seeds are roasted to get a better taste of the tea cookies. Roast them in medium flame, constantly stirring them for 3 to 5 min. When you get the smell of the roasted seeds and see the smoke rising from the pan, please turn off the heat so they don’t burn out.

2. Now, make the honey syrup by melting the sugar and water in a saucepan at medium flame. When the sugar dissolves, add honey and rice syrup. Raise the heat from medium to medium-high flame and let them boil.

3. When the water is boiled. Turn off the heat and let it cool; make sure that you won’t boil them too much; if they boil too much, the syrup becomes too thick, which is not suitable for dasik.

4. Now it’s time to blend the sesame seeds. Blend them for 1 min with a slow start. The more you blend, the fine particles you get. Blend them until the grind seeds begin to lump up due to the release of oil. About 1/2 cup sesame seeds equal 1 cup sesame seeds crushed. Traditionally, a giant mortar/pestle was used to make this.

5. Now, add some sea salts to the sesame seeds. People usually add them while grinding the sesame seeds, but adding the salts after the grinding seeds in a separate bowl gives them a better taste of cookies. Consider using high-quality salts.

6. Let’s make the dough of the cookies. Add honey with the sesame seed powder in a bowl and mix them well. Try mixing them until they form a ball.

7. After making a large dough ball, make some short balls of dough using your hand. And now fill them in Dasik pan molds, fill them correctly with the hands, remove the spacer and press the top frame down after the molds have been filled.

8. This is the most challenging aspect of making Dasik. When you remove the dough from the mold, it will break off if it is too crumbly. It will not retain its shape if it is overly moist (too much syrup or too much oil).

9. Now, you can make the cookies as you want.

How To Store dasik:-

Sometimes We Have Leftover Cookies In our kitchen, or sometimes we make the cookies in advance, so whenever we craved the cookies, we have already made cookies are available. We have to know the right way of storing the cookies in both cases.

So to store cookies, I would suggest putting them in an airtight container or ziplock bag then putting them in the freezer. This will help to increase your cookies self-life. This method can store your cookies for up to 2-3 weeks.

  1. I would like to make this recipe as it sounds so delicious. But I think the recipe is missing the ingredients and amounts to make the honey syrup. The instructions say how to make the syrup but the list of ingredients is missing the amount of sugar, water, honey and rice syrup to use.

    Please correct this so the recipe can be used.
