Where it Comes From?

Revani is a classical Turkish dessert. It is served as Turkish cuisine from the last Ottoman period. Revani got his name by ottoman when they defeat the city of Yerevan (which is now known as Armenia). It is called ‘basbousa’ in Arabic and ‘shamali’ in Armenian. This dessert is also adapted by middle east culture.

Revani is a sort of yellowcake prepared with a mix of semolina and all-purpose flour. This cake is a mainstay in Turkish cuisine, with each home and restaurant having its own unique version, When you taste this little bit, you cannot get over it.

It is not only famous in turkey but several other Middle Eastern and Mediterranean countries also adapted this dessert and all have some variation in their own specific way.

How to make revani

For the Syrup:-

3 cups sugar1/2 tsp lemon (juiced)
3 cups water

For the Cake:-

3 eggs1/2 cup sugar
3/4 cup vegetable oil1 lemon (zested)
1 teaspoon vanilla1 cup plain yoghurt
3 tablespoons flour1 cup uncooked semolina
1/4 cup finely ground hazelnuts1/2 teaspoon baking soda
2 teaspoons baking powder

What is Semolina Flour?

Semolina is a coarse flour prepared from durum wheat rather than the other prevalent wheat variety, known simply as common wheat mainly used in making couscous, pasta, and sweet puddings.

When durum wheat is milled, its most nourishing parts are ground into semolina.
Because the grains of durum wheat is golden in colour, the milled semolina is a pale yellow flour. It is not a gluten-free product.

Let’s check this step by step recipe so you can make a perfect Revani cake in pure Turkish style. If you follow my step you will completely succeed:-

  • Preheat the oven at 350 F (175 C), take the 9 by 13 inch baking pan that should be greased.
  • Now take a medium saucepan and add sugar and water to it, then put them to boil on high flame, and stirring it continuously after boiling, reduce the heat to medium flame with the cover off.
  • Add lemon juice to the end. Now turn off the heat and let it cool for some time.
  • Take a large bowl, add egg and sugar and whisk it. Whisk the mixture until the sugar dissolves; the more you wish, the more taste you got.
  • Again whisk it for several minutes by adding the oil, lemon zest, vanilla, and yoghurt. Blend the dry ingredients and stir well until a thick batter forms.  
  • Pour the mixture into the baking pan and bake for 30 to 40 min until the upper part turns brown. After baking, let them cool for 5 min.
  • Now, slowly drizzle the syrup in the cake. Now, cut the cake into small rectangular pieces.
  • now it time to enjoy.

Tips:-

  • Please be careful when you drizzle the sugar syrup because sugar syrup is the most important part of this recipe so if the sugar syrup is added incorrectly, then the whole texture is going to waste.
  • Always make the syrup before the cake because the syrup will take time to cool down if you don’t cool it properly then it is not going to absorb correctly by the cake. and if the syrup is cooled properly and if you poured it into warm cake then the cake absorb the whole syrup and you will get the perfect texture and taste.
  • If you want the perfect Revani dessert then you should cut the cake before pouring the syrup, if you cut the cakes into rectangular pieces then the syrup will easily be poured all around the baking pan and the cake absorbs the syrup evenly.
  • Refrigerating the Revani for a few hours or even overnight before serving allows the syrup to seep in and deliver the greatest taste.

Variation:-

you have seen many variations in all types of food so just as that Revani has also a lot of variation. let’s see some of them:-

1. You may also create orange-flavoured Revani by replacing the lemon zest and juice with orange zest and juice, or you can leave out the lemon entirely and replace it with rose water to give the cake a lovely rose smell.

2. Similar garnishes, such as lemon or orange slices, zest, curls, or even candied peel, might help to round out the tastes.

3. Flaked almonds, coconut shavings, and even other types of chopped nuts or dried fruits can be used as garnishes to add taste.
