1/2 cup dairy-free, vegan butter1 cup brown sugar
1 teaspoon vanilla extract 2 cups unbleached all-purpose flour
2 cups quick-cooking or old fashion oats 3/4 cup almond milk
1 teaspoon ground cinnamon1 teaspoon baking powder
1/2 teaspoon salt

Vegan butter:- Here, I am using dairy-free butter. It will add extra richness to the cookies, taking your simple vegan oatmeal cookie to the next level. It would be best if you cut the butter before softening them.

Oats:-Here I am using old-fashioned round oats, and I have a tip for you if you have large-sized round oats, then blend them in a blender for a little, so they make a proper cookie dough. By this, you can make perfect-sized cookies.

Salt:- It is just to increase the taste of the cookies. I always love the pinch of salty taste in my cookies. This makes my cookies perfect for tea time, and it is also used to balance the sweetness.

Cinnamon:- Using cinnamon gives a spicy texture to the cookies, increasing the taste of cookies.

Milk:- Here, I am using almonds milk, but you are free to use the milk you want, like oats, soy, and cashew milk.

  2. With a wooden spoon, cream together vegan butter, brown sugar, and vanilla extract in a large mixing dish.
  3. In a separate medium-sized mixing bowl, combine all-purpose flour, old-fashioned oats, ground cinnamon, baking powder, and salt.
  4. Using a wooden spoon, combine the dry and wet ingredients. Continue to whisk in the almond milk until thoroughly blended.
  5. Scoop roughly two teaspoons of the cookie dough onto the prepared baking sheets at a time. Allow around two inches space between cookies.
  6. Bake the oatmeal cookies for about 10 minutes, rotating halfway through.
  7. When finished, the cookies will be a pale tan hue with a golden brown bottom border.
